Chicken with Mint with Vegetables

This chicken recipe is light and very rich thanks to the combination of vegetables, white wine and mint flavor. A perfect dish for any occasion and that surely everyone will love.

Ingredients

4 portions
  • 600 grams chicken breast, cut into thick cubes
  • 100 grams green bean
  • 1/2 cups flour
  • 1/4 cups olive oil
  • 3/4 cups white wine
  • 1 cup Fresh mint
  • 2 tablespoons almond
  • 200 grams cherry tomato
  • to taste black pepper

Preparation

In a pot with 2-3 cups of water and salt cook green beans for 5 minutes or until lightly cooked. Strain the green beans and place under cold water to stop cooking.
Place the flour on a plate and crush the chicken cubes in the flour.
In a large frying pan, heat 2 tablespoons olive oil over medium heat. Add the chicken and cook for 5-6 minutes.
Add the white wine, season with salt and pepper and continue cooking until the wine has evaporated and the chicken is well cooked (5 minutes more). Remove from the fire.
In a blender mix 1/4 cup of olive oil, mint, almonds, 1 tablespoon of water and 1/2 teaspoon of salt. Make a puree.
Mix the chicken with the green beans, the cherry tomatoes and place in the serving dishes.
Spoon the mint pesto over the chicken and vegetables. It serves.

PRESENTATION

Decorate your dish with mint leaves.

TIPS

You can add pumpkin instead of tomato.
