A recipe that becomes the favorite of the whole family, especially children. Indian walnut chicken is a recipe originally from India / Asia but with this touch of chipotle it receives a Latin flavor.

Ingredients

6 portions
  • 1 onion, chopped
  • 2 tablespoons vegetal oil
  • 1 kilo chicken breast, cut into cubes or strips
  • 3 tablespoons soy sauce
  • 4 cloves garlic
  • 1 red pepper, chopped
  • 1 cup raw pea, or frozen pea
  • 4 tablespoons chipotle chili sauce
  • 1 tablespoon cumin
  • 2 tablespoons honey
  • 2 cups cashews
  • 2 tablespoons fresh coriander, chopped
  • 1/4 cups maple syrup

Preparation

Heat a large skillet over medium heat, add the vegetable oil and cook the chicken until well cooked on both sides.
Add the soy sauce, onion, pepper and garlic and cook for 2-3 minutes.
Add the peas and mix well.
Add the chipotle and cumin and mix.
Cover with honey and honey maple, remove from heat and add cilantro and Indian walnut.
Mix well and serve with brown rice.
