This Avocado Caprese Chicken is a delicious way to eat avocado prepared with tomato, basil, mozzarella cheese, and balsamic vinegar dressing. It isn't necessary to cook this recipe of Caprese Chicken in the oven, and you can use the chicken broth for cooking, which will make it juicier. Serve with fresh basil and the vinaigrette.

Ingredients

4 servings
  • 500 grams of chicken breast skinless, boneless, sliced and flattened into medium cutlets
  • 1/4 of tablespoon of Salt
  • 1/4 of tablespoon of black pepper ground
  • 1/2 tablespoon of olive oil
  • 160 grams of mozzarella cheese sliced
  • 1 piece of beefsteak tomato sliced crosswise
  • 1 piece of Avocado from Mexico thickly sliced
  • 1/4 of Cup of chicken soup
  • 2 spoonfuls of balsamic vinegar for the vinaigrette
  • 1/4 of tablespoon of garlic powder
  • 1/2 tablespoon of onion powder for the vinaigrette
  • 1/4 of tablespoon of Salt for the vinaigrette
  • 1/4 of tablespoon of black pepper ground, for the vinaigrette
  • 2 spoonfuls of olive oil for the vinaigrette

    Preparation

    On a board, season chicken cutlets with salt and pepper on both sides.
    In a pan, heat olive oil over medium heat and sear cutlets until lightly browned on both sides.
    Pour in chicken stock, cover pan and cook for 15 minutes, or until chicken is done.
    For the vinaigrette, in a bowl, whisk balsamic vinegar with garlic powder, onion powder, salt, pepper and olive oil until incorporated.
    Serve the breasts with vinaigrette

    PRESENTATION

    Serve with fresh basil and balsamic vinaigrette.

    TIPS

    Chicken stock will help the chicken to cook without burning and it will be juicier.
