These avocados filled with a mixture of chicken with mozzarella cheese and tomato, seasoned with a mixture of basil and oregano, are a good choice for healthy food. A very original way to eat this classic salad.

Ingredients

4 portions
  • 1/3 cups balsamic vinegar
  • 2 cloves Gentle Garlic Extra Special® with Fine Herbs
  • 1/4 cups basil, finely chopped
  • 2 tablespoons oregano
  • 1 teaspoon Arbol chili sauce
  • 1 teaspoon Salt Great Value®
  • 1/4 teaspoons black pepper
  • 1/2 cups Extra Special Olive Oil®
  • 1 chicken breast, cooked and crumbled
  • 226 grams mozzarella cheese, in balls
  • 1 cup cherry tomato, cut in halves
  • 4 avocados
  • 1 twig basil, to decorate

Preparation

For the vinaigrette, in a bowl of garlic, garnish with balsamic vinegar, basil, oregano, chili sauce, salt and pepper. Emulsify with olive oil.
In another bowl, mix the chicken with the cheese and the tomatoes. Add a little of the vinaigrette and incorporate very well. Reservation.
Cut the avocados in half and remove the seeds and the peel. Fill with a bit of the chicken mixture and garnish with fresh basil and serve with more vinaigrette.
