Chicken breasts stuffed with cottage cheese, spinach and dried cranberries, dipped in chipotle sauce and cream.

  • 4 chicken breasts, without skin
  • 4 cups spinach, chopped
  • 2 red onions
  • 1 yellow bell pepper
  • 1 cup cranberry
  • 2 tablespoons butter
  • 400 grams cottage cheese
  • 3 garlic
  • 3 tablespoons chicken consommé
  • 1 tablespoon olive oil
  • salt, to taste
  • small pepper, to taste
  • 350 grams cream
  • 65 milliliters milk
  • 2 tablespoons chipotle peppers in adobo sauce
  • 2 bouquets fresh oregano


Cut an onion and a half and the red pepper in squares about one centimeter. Open the breasts with the help of a knife in three parts as if it were a triptych and salpimenta on both sides.
Place a saucepan over medium heat and add a tablespoon of butter with a tablespoon of oil to heat, then add two cloves of finely chopped garlic , then the onion in squares and let it sauté lightly. Then add the spinach and bell pepper, salt, pepper and two tablespoons of chicken broth. Let it all be cooked until it reduces its volume in half, when it begins to release juice, remove the pan from the heat and let it cool a little.
Integrate the stew with cottage cheese and blueberries, rectify the seasoning. Fill each breast by compacting the casserole dish a little to prevent it from coming out, close the breasts with care that the filling does not come out and place them face down in a mold previously greased with butter. Preheats the oven to 200 ° C.
To make the sauce, liquefy the chipotle, oregano, milk, half an onion, a clove of garlic and a tablespoon of broth, then add the liquefied to the cream, mix perfectly and add a little salt and pepper. Cover the breasts with the sauce and bake for 50 minutes


Split the breasts in half diagonally and serve them with a fresh salad.


Do not let the breasts cook for more than 1 hour to avoid releasing all their juice and the meat is very dry.
