Delicious chicken breast medallions to impress anyone, ideal on any day, as they are easy to prepare. They can be accompanied with a salad or pasta but the combination of aubergines and chicken is delicious.

Ingredients

6 portions
  • 6 chicken breasts, in medallions
  • 1 eggplant
  • 1 bag ground bread
  • 1/2 cups parmesan cheese
  • 1 cup wheat flour
  • 2 eggs
  • 3 tablespoons butter
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 50 grams ground oregano, (for the empanizer)
  • 1 tablespoon black pepper

Preparation

Place the wheat flour on a plate and pass the medallions through the flour.
Place the eggs and half of the Parmesan cheese in a bowl with a little pepper and whisk. Pass the medallions by the shake on both sides pressing well, since with the flour it costs more work to adhere the shake.
Mix the bread crumbs, dried parsley (or powder), thyme, rosemary, salt, the remaining half of the Parmesan cheese. Finally go through the bread crumbs on both sides and press so that the bread sticks well.
In a skillet previously heated with a medium-low flame place the butter and let melt, place the medallions and leave 5 minutes per side so that they are well browned.
The aubergines are cut into slices of about 1 cm, olive oil, salt and pepper are placed on a grill. Grill 2 minutes per side and serve with the breasts.

PRESENTATION

You can place the medallions with the aubergines and decorate with a little parsley, they will look delicious.

TIPS

Choice of hard bread or crispy ground bread that is not very ground will make your medallions crispy.
