Preparation
Place the wheat flour on a plate and pass the medallions through the flour.
Place the eggs and half of the Parmesan cheese in a bowl with a little pepper and whisk. Pass the medallions by the shake on both sides pressing well, since with the flour it costs more work to adhere the shake.
Mix the bread crumbs, dried parsley (or powder), thyme, rosemary, salt, the remaining half of the Parmesan cheese. Finally go through the bread crumbs on both sides and press so that the bread sticks well.
In a skillet previously heated with a medium-low flame place the butter and let melt, place the medallions and leave 5 minutes per side so that they are well browned.
The aubergines are cut into slices of about 1 cm, olive oil, salt and pepper are placed on a grill. Grill 2 minutes per side and serve with the breasts.
