Milanesa Stuffed with Rajas with Cheese

This chicken milanesa recipe will be a new way to eat this type of cut, which is very popular among Mexican palates, as they are stuffed and breaded. Although the milanesas can be made of different types of meat such as beef, chicken or pork, stuffed or au gratin, with this version you will prepare a filling with slices and cheese, as well as you will learn how to bread breaded chicken with panko.

Ingredients

4 portions
  • 2 tablespoons butter
  • 1 1/2 cups onion, filleted
  • 1 1/2 cups poblano pepper, in slits
  • 1 cup corn grain
  • 1 cup cream cheese
  • to taste salt
  • to taste black pepper
  • 4 chicken breasts
  • to taste salt
  • to taste black pepper
  • 2 cups Oaxaca cheese, unraveled
  • 1 cup flour
  • 3 eggs
  • 1 cup ground bread
  • enough vegetal oil
  • enough broccoli, To accompany
  • enough carrot, To accompany

Preparation

Heat a skillet over medium heat and add the butter and onion; Sauté for a few minutes and add the poblano pepper strips and corn kernels, season with salt and pepper, and cook for 10 minutes; add the cream cheese. Reservation.
Season the milanesas with salt and pepper; Fill with the slices and with the Oaxaca cheese, roll them up and secure them with toothpicks.
Bread the milanesas with the flour, the egg and the panko; In a hot frying pan with enough oil, fry the milanesas until they are completely cooked. Drain and reserve.
Serve the milanesas warm and serve with sautéed broccoli and carrots. Enjoy.

TIPS

It is important that you cook the milanesas at high temperature initially and then lower the temperature so that the whole roll is cooked. You can also cook the roll in an air fryer and it is very crispy, just spray a little cooking spray.
