Caprese Chicken with Avocado

This Avocado Caprese Chicken is a delicious way to eat avocado prepared with tomato, basil, mozzarella cheese, and balsamic vinegar dressing. It isn't necessary to cook this recipe of Caprese Chicken in the oven, and you can use the chicken broth for cooking, which will make it juicier. Serve with fresh basil and the vinaigrette.

  • 500 grams chicken breast, skinless, boneless, into medium cutlets
  • 1/4 tablespoons salt
  • 1/4 tablespoons black pepper, ground
  • 1/2 tablespoons olive oil
  • 160 grams mozzarella cheese, cut in slices
  • 1 beefsteak tomato, sliced crosswise
  • 1 Avocado from Mexico, cut in thick slices
  • 1/4 cups chicken soup
  • 2 tablespoons balsamic vinegar, for the vinaigrette
  • 1/4 tablespoons garlic powder
  • 1/2 tablespoons onion powder, for the vinaigrette
  • 1/4 tablespoons salt, for the vinaigrette
  • 1/4 tablespoons black pepper, ground, for the vinaigrette
  • 2 tablespoons olive oil, for the vinaigrette


On a board, season chicken cutlets with salt and pepper on both sides.
In a pan, heat olive oil over medium heat and sear cutlets until lightly browned on both sides.
Pour in chicken stock, cover pan and cook for 15 minutes, or until chicken is done.
For the vinaigrette, in a bowl, whisk balsamic vinegar with garlic powder, onion powder, salt, pepper and olive oil until incorporated.
Serve the breasts with a little vinaigrette and enjoy.


Serve with fresh basil and balsamic vinaigrette.


Chicken stock will help the chicken to cook without burning and make it juicier.
