Baked Chicken with Rosemary and Cranberries

This chicken recipe is an excellent option to spoil your family during the Christmas season, because with it you will have a dinner with chicken breasts and marinated thighs with ingredients that give it a lot of flavor, such as Nutrioli® Oli, rosemary and dijon mustard. This baked chicken is accompanied with a gravy of very Christmas blueberries, and a garnish of mashed potatoes. To make your chicken more juicy, you can let it soak in water before using.

Ingredients

4 portions
  • 2 tablespoons Oli de Nutrioli® Olive Oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons garlic, finely chopped
  • enough black pepper
  • 1 teaspoon rosemary, finely chopped
  • 1 tablespoon lemon juice
  • 2 chicken breasts, skinless, in halves
  • 4 chicken thighs, without skin
  • 1/2 cups white wine
  • 1/2 onions, in large cubes
  • 1/2 cups leek, in cubes
  • 1/2 cups celery, sliced
  • 1 cup cranberry , dehydrated
  • 1/4 cups orange juice
  • enough fresh rosemary, and whole

Preparation

Preheat the oven to 180 ° C.
For the marinade, mix Oli from Nutrioli® Olive Oil with the dijon mustard, garlic, pepper, chopped rosemary, lemon juice and chicken. Marina for 1 hour.
Place the chicken on a baking sheet with white wine, onion, pore, celery, blueberries, orange juice, rosemary, salt and pepper. Bake for 45 minutes, at 180 ° C.
Remove from the oven and blend the cooking liquids together with the vegetables to make the gravy.
In a pot, cook the gravy for 15 minutes.
Serve the chicken with the gravy and decorate with the cherries, the rosemary and the blueberries.

PRESENTATION
