Breast in Green Sauce and Rice with Calabacita

This dish has folic acid that helps your brain function properly. You can prepare it one night before and store it in a tupper. It looks for that the container has divisions so that the flavors of the chicken and the rice do not mix.

Ingredients

  • 90 grams of chicken breast
  • 2 teaspoons of vegetable oil
  • 1 piece of chile serrano
  • 1/2 piece of onion
  • 2 teeth of Garlic finely chopped
  • 2 pieces of green tomato
  • 1/4 of Cup of rice
  • 1 piece of zucchini

    Preparation

    Cut thin slices of green zucchini.
    Add oil to a pot and sauté 1 garlic and ¼ of finely chopped onion.
    Add the rice and stir-fry lightly.
    Add ½ cup of water, zucchini and a little salt. Let boil, cover the pot and lower the heat. Leave to cook on low heat for 20 minutes.
    After that time uncover the pot and carefully move the rice with the help of a fork.
    Heat remaining ¼ of onion, garlic, chili and green tomatoes.
    Place the roasted vegetables in the blender and ¼ cup of water or defatted chicken broth. Blend until you get a sauce.
    Add a little vegetable oil to a pan and cook the chicken breast, pour the green sauce on top and cook for about 5 minutes.
    Serve the chicken breast along with the rice.

    PRESENTATION

    Garnish with coriander.

    TIPS

    You can accompany it with a salad and a low-fat vinaigrette.
