Chicken Salad with Nut Vinaigrette

There is nothing healthier than a salad that better than to accompany it with a walnut vinaigrette. Thanks to the nut this vinaigrette is high in antioxidants and reduces bad cholesterol.

Ingredients

5 portions
  • 1 kilo boneless chicken breast
  • 2 bunches fresh spinach
  • 1 green lettuce
  • 1 package white goat cheese
  • 500 grams green grapes
  • 1/2 bags whole walnut
  • 1 cup wine vinegar
  • 2 cups canola oil
  • salt, to taste
  • black pepper, to taste

Preparation

Cut the chicken into cubes and season with salt and pepper.
Heat a pan and add oil. Cook chicken cubes until lightly browned.
Blend the nuts with the vinegar, salt, pepper and a little oil.
Mix the lettuce with the spinach, the goat cheese, the grapes and the chicken.
Pour the salad dressing.

PRESENTATION

Serve the lettuce in a bowl and add the chicken on top. Put a little more vinaigrette on top.

TIPS

You can substitute the grapes for blueberries.
