Ingredients

4 portions
  • 200 grams chicken breast, in steaks
  • 150 grams cauliflower
  • 50 grams leek
  • 2 carrots
  • 100 milliliters coconut milk
  • 4 tablespoons peanut butter
  • 1 clove garlic
  • 20 grams fresh ginger
  • 1/2 lemons
  • 2 teaspoons olive oil
  • salt, to taste
  • black pepper, to taste

Preparation

Wash the chicken breast with cold water, dry and cut into 1 cm strips.
Cut the cauliflower
Wash the leek and cut into slices
Peel the carrots and cut into slices.
Heat 1 teaspoon of oil in a pan over medium heat.
Sauté the meat strips and vegetables 2 minutes on each side. Remove the strips and reserve them.
Add 150 ml of water to the vegetables and simmer for 5 minutes or until the water evaporates.
Peel the garlic and ginger and cut them into thin pieces.
Squeeze the lime.
Heat 1 teaspoon of oil in a tall pot over medium heat
Add the chopped garlic, ginger and chili to the pot and fry for about 3 minutes.
Cover with coconut milk, bring to a boil and remove from heat.
Add peanut butter and lime juice and season with salt and pepper
Serve the meat strips and the vegetables with the peanut sauce.

PRESENTATION

Serve on a black plate accompanied by pink ginger (gary).
