Ingredients

4 servings
  • 3 pieces of avocado for the guacamole
  • 1/2 piece of onion finely chopped for the guacamole
  • 3 pieces of tomato diced for guacamole
  • 3 pieces of serrano pepper finely chopped, for the guacamole
  • 1 tablespoon of coriander finely chopped, for the guacamole
  • 1/2 Cup of lemon juice for the guacamole
  • 1/4 of Cup of olive oil for the guacamole
  • 1/2 teaspoonful of Salt for the guacamole
  • 1/4 of teaspoonful of black pepper for the guacamole
  • 4 pieces of chicken breast flattened
  • 1/2 teaspoonful of Salt for breasts
  • 1/4 of Cup of flour
  • 1 piece of egg
  • 1/2 Cup of ground bread
  • 1/4 of Cup of Parmesan cheese grated
  • 1/4 of Cup of oil

    Preparation

    For the guacamole, mix all the ingredients in a bowl and add well until it is creamy, season and reserve.
    Spread the breasts on a board and add salt on both sides. Place 3 tablespoons of guacamole one end of each breast and roll up. Ensure if necessary with a toothpick, taking care not to leave the guacamole.
    In different bowls, place the flour, the egg and the ground bread combined with the cheese.
    Pass the breasts carefully through the flour, then through the egg removing the excess, and finally through the ground bread.
    In a pan heat the oil and fry each breast over medium heat until cooked on the inside and browned on the outside.

    PRESENTATION

    Cut the breasts into thick slices to see inside.

    TIPS

    If you do not want to breed the breasts, you can seal them in the pan with very hot oil and finish the cooking in the oven.
