This recipe for chicken croquettes, also known as coxinhas, are pieces of stuffed chicken dough that are fried. This is a typical dish of the Brazilian street and ideal to prepare during the Brazil World Cup 2014 as a snack to watch a game. In this recipe they carry a little cream cheese to give them a special touch.

Ingredients

12 servings
  • 2 cups of chicken soup
  • 2 cups of flour sifted
  • 1 onion chopped
  • 1 Red bell pepper chopped
  • 3 cups of oil
  • 2 cups of chicken cooked and deshebrado
  • 2 spoonfuls of fresh parsley chopped
  • 1/2 package of cream cheese cut into cubes and softened

    Preparation

    Boil the chicken stock in a large pot and add the flour little by little. Stir without stopping for 2 or 3 minutes until a dough forms. Let cool.
    In a little oil, cook the chopped onion and red pepper until cooked. Add the chicken and the chopped parsley and mix everything. Add the cream cheese and stir.
    Work the prepared dough for a few minutes (on a flat, floured surface) until it is smooth. Divide the dough into 12 parts. And with a roller it forms "discs" of dough that are about 20 cm in diameter. Place a few tablespoons of chicken filling in the center of each disk and wrap with the rest of the dough so that it is well sealed. Form the croquettes so that they are shaped like chicken thighs.
    Heat the oil in a medium-high medium saucepan until the temperature is ready to fry. Fry the croquettes for 8-10 minutes until golden brown. Drain the croquettes on paper towels.
