Preparation
In a pan heat the oil and fry the guajillo chili, onion, garlic, tomato and cumin. Add the chicken broth and let reduce in half. Cool slightly
Blend the previous preparation and strain if necessary.
In a deep pan, melt the butter and seal the chicken until golden brown, add the sauce. Once it has boiled, cover and let it cook for 15 minutes, season with salt and pepper.
Serve and garnish with fried guajillo chile, cilantro and serve it with rice.
