Chicken in Chile Sauce Guajillo

Go ahead and prepare this delicious chicken dish in guajillo chile sauce, as well as being very easy to prepare, it is economical and ideal for day-to-day life. Serve it with white rice and give the newspaper a twist.

Ingredients

4 portions
  • 2 tablespoons oil
  • 6 guajillo chilies
  • 1/2 onions
  • 2 cloves garlic
  • 3 tomatoes
  • 1/2 teaspoons cumin, whole
  • 1/2 cups chicken soup
  • 2 tablespoons butter
  • 2 chicken breasts, without bone, without skin and in halves
  • 1 teaspoon salt
  • 1/2 teaspoons black pepper
  • to taste guajillo chili, fried and julienned, to decorate
  • to taste fresh coriander, to decorate

Preparation

In a pan heat the oil and fry the guajillo chili, onion, garlic, tomato and cumin. Add the chicken broth and let reduce in half. Cool slightly
Blend the previous preparation and strain if necessary.
In a deep pan, melt the butter and seal the chicken until golden brown, add the sauce. Once it has boiled, cover and let it cook for 15 minutes, season with salt and pepper.
Serve and garnish with fried guajillo chile, cilantro and serve it with rice.
