This chicken is a tradition in my family for Christmas dinner, it is a Spanish recipe, since my grandmother was a cook of them is very rich. The chicken remains very juicy and is accompanied with mushrooms, peas and chambray potatoes. Prepare it!

Ingredients

8 portions
  • 1 whole chicken
  • 5 cans mushroom, in pieces and whole
  • 3 cans pea
  • 1 can Green rajas
  • 90 grams butter
  • 2 onions, slice thinly
  • 1 bunch parsley, finely chopped, only the leaves
  • 1/2 kilos cambray potato
  • 4 leaves bay (laurel)
  • 8 peppercorn, milled
  • to taste salt

Preparation

Clean the chicken and remove the skin from the thighs and breasts, place in a large saucepan to melt the butter and add the chicken pieces; Fry over low heat and cover for about 15 minutes.
Add the parsley, the sliced ​​onion, the ground peppers, the bay leaves, the chickpeas, cover and cook for another 15 minutes to 20 minutes over low heat.
Finally, add the cans of mushrooms and drained pea, the can of rajas in vinegar and season. Move to integrate all the ingredients, cook for another 60 minutes until the chicken is very soft and juicy.

PRESENTATION

Serve hot, with a good garnish of mushrooms accompanied by salt bread.
