Preparation
In a deep pot cook the chicken, tomatoes and chilies.
Once cooked, grind them together with the garlic, 1/3 of onion and a little of the cooking broth of the chicken.
Then add the onion julienne, carrot, cilantro, bay leaves and mint leaves to the pot.
Incorporate the tomato and chili mixture. Rectify seasoning by seasoning to taste.
