Chicken Mixiote with Nopales

Mixiotes are a dish typical of Mexico, generally of enchilada meat and steamed. This recipe for chicken mixiotes will enchant you for its traditional flavor of spices and aroma that emerges when you open them.

Ingredients

4 portions
  • 1 tablespoon oil
  • 2 tomatoes
  • 1/4 onions
  • 2 cloves garlic
  • 6 guajillo chilies, deveined
  • 2 ancho chili peppers, deveined
  • 1 teaspoon oregano
  • 2 black pepper
  • 2 cloves
  • 2 leaves bay (laurel)
  • 1/2 teaspoons cumin
  • 1/2 cups orange juice
  • 2 chicken thighs
  • 2 chicken legs
  • 2 cups nopal, cut into strips
  • enough avocado leaves
  • to taste salt

Preparation

Heat the oil in a pan over medium heat and cook the tomatoes, onion, garlic.
Add the chiles and cook a few minutes on low heat, taking care not to burn.
Add the spices, pour the orange juice, cook for 2 minutes to soften the peppers, season with salt. Cool slightly
Blend the previous preparation until a thick sauce is obtained.
In a bowl add the chicken pieces, pour the sauce and mix.
On a sheet of aluminum foil place an avocado leaf on top, the piece of chicken, add nopal and close
Place the mixiotes on the grate of a steamer and cook for 90 minutes.

PRESENTATION

On an extended plate, accompanied by white rice.

TIPS

When frying the peppers, be careful not to burn them, as it could embitter the sauce.
