Cooking chicken is a favorite ingredient in kitchens because there are many ways to prepare it, like this recipe for Chicken Pancakes with Parsley and Chipotle Sauce. These pancakes are prepared in 40 minutes and you will have a very tasty and delicious meal for the whole week. Ingredients

4 portions
  • 1 1/2 cups ground chicken meat
  • 1/2 tablespoons garlic powder, for the pancakes
  • 1/4 cups onion, finely chopped for the pancakes
  • 1/4 cups parsley, finely chopped for the pancakes
  • 1 tablespoon oregano, for the pancakes
  • 1 egg, for the pancakes
  • salt, for the pancakes
  • pepper, for the pancakes
  • 3 tablespoons vegetable oil
  • 1/4 onions, roast for the sauce
  • 1 clove garlic, roast for sauce
  • 5 tomatoes, roast for sauce
  • 3 tablespoons chipotle chile, for the sauce
  • 3 tablespoons piloncillo, granules for the sauce
  • 3/4 cups chicken broth, for the sauce
  • parsley, to decorate
  • avocado, to decorate
  • oregano, To accompany

Preparation

For the pancakes, mix the ground chicken meat with the garlic powder, onion, parsley, oregano and egg until everything is incorporated; Season with salt and pepper. Form the pancakes with the help of your hands, refrigerate.
For the sauce, blend the onion, garlic, tomato, chipotle, piloncillo and chicken broth until you get a homogeneous mixture.
In a saucepan with hot oil pour the chipotle sauce, add each chicken pancake one by one, season with salt and pepper.
Serve in an extended plate, decorate with parsley and Cotija cheese, accompany with white rice.

PRESENTATION

Serve on an extended plate, garnish with parsley and cotija cheese.

TIPS

You can use cooked and shredded chicken if you don't have ground chicken. You can fry the chicken pancakes in two tablespoons of olive oil to make them firmer.
