Prepare this easy chicken skewer recipe. It is very economical and satisfying since it is prepared with chicken breast, chorizo, bacon and a combination of vegetables. The best part is that you can do everything in a pan in just 3 steps. The original recipe includes beef, bacon, onion, pepper and cheese. But as we can see this popular dish of Mexican cuisine has many variants because you can replace the type of meat and vegetables to taste. Originally, the skewer was made as a skewer inserting the ingredients in a wire skewer; thus its name. You can east this exquisite chicken in tacos accompanied by your favorite sauce. You will not regret it.

Ingredients

8 portions
  • 1/2 cups sausage, crumbled
  • 1/2 cups bacon, chopped
  • 2 tablespoons garlic, finely chopped
  • 1 red onion, cut into pieces
  • 2 chicken breasts, skinless, boneless and cut into cubes
  • 1 cup mushroom, finely sliced
  • 1 yellow bell pepper, cut into pieces
  • 1 red bell pepper, cut into pieces
  • 1 Bell pepper, orange color cut into pieces
  • 1 pumpkin, cut in half moons
  • 1 pinch salt and pepper
  • 1 cup manchego cheese, grated
  • to taste corn tortilla, to serve
  • to taste sauce, to serve
  • to taste lemon, to serve

Preparation

Heat a frying pan over medium heat and fry the sausage and bacon until golden brown. Add the garlic and onion and cook until they are clear. Add the chicken, season with salt and pepper and cook until browned.
Once the chicken is cooked, add the vegetables one by one cooking a few minutes before adding the next one. Finally, add the cheese and cook 5 more minutes to melt, season to taste.
Serve the chicken accompanied by corn tortillas, salsa and lemon.

PRESENTATION

Serve the chicken with corn tortillas and salsa.

TIPS

The skewer can also be made with beef or seafood.
