Chicken Stuffed with Rajas in Pumpkin Flower Sauce

These stuffed chicken breasts do not ask for anything from any other recipe. Take advantage of the delicious flavor of pumpkin flowers and fill them with the authentic Mexican flavor. They will make you fall in love!

Ingredients

5 portions
  • 7 tablespoons oil, 2 for the slices and 5 for frying the breasts
  • 1/2 onions, finely chopped
  • 1 clove garlic, finely chopped
  • 1 cup Poblano pepper Strips (Rajas)
  • 1/2 cups whole kernel corn, cooked
  • 5 slices asadero cheese, thin
  • 2 pinches salt
  • 5 chicken milanesa (breaded)
  • 10 chopsticks
  • 2 cans Pumpkin Flower Cream, Campbell's®
  • 1 teaspoon mustard
  • 2 pinches salt
  • 1 cup corn tortilla, in strips and fries

Preparation

Heat two tablespoons of oil in a medium skillet over medium heat. Add the onion and sauté for 2 minutes to change the onion color, add the garlic, the slices, the corn kernels. Cook for 3 more minutes and season.
Spread the salted chicken milanesa on both sides. Place a slice of cheese on the chicken, add two or three tablespoons of rajas with corn. Roll and close with two chopsticks. Repeat this until you fill the 5 chicken steaks.
Heat the 5 tablespoons of oil in a large medium skillet and fry the chicken rolls for at least 7 minutes or until golden brown on all sides.
Remove grease if necessary, add the can of pumpkin flower cream plus ½ can of water, the mustard spoon, mix perfectly and season. Let cook for 5 minutes over medium heat and remove from heat.
Serve in an extended dish, slicing the chicken breasts with the sauce and decorate with fried tortilla strips.

PRESENTATION

Serve in an extended dish with very hot sauce.

TIPS

You can add some oregano to the pumpkin flower sauce to flavor.
