Today touches another of my favorite dishes. It is a very simple recipe and the result is a delicious dish, chicken with wine. The amount of wine, in case they prepare less quantity of chicken, is enough to cover the pieces of meat.

  • 10 chickens, without skin
  • 1 onion, big
  • 2 cloves garlic
  • 150 grams Ham, chopped
  • 250 grams mushroom, whole, 1 can
  • 1/2 liters Red wine
  • 2 tablespoons cornstarch
  • 3 tablespoons Red wine


In the pot where we prepare the recipe we dorado the chicken (previously we will salt to taste) slightly on both sides and reserve. We will remove the oil that is on us since we only need a little to poach the onion.
Chop the onion into small pieces and toss it into the pot to poach.
When we have the pochadita onion we add the crushed cloves of garlic, the ham and the mushrooms and stir everything well leaving it to cook a couple of minutes.
After 2 minutes, add chicken and wine, bring to a boil and immediately lower it to low heat. Let cook for about 1 hour until tender meat is visible. During this cooking time the pot should be covered.
When the meat is ready, mix in a glass the starch and 3 tablespoons of wine and pour it slowly into the pot stirring well to mix with the sauce. The mixture of starch and wine should not be too thick or too hot.
Let cook for 3-4 more minutes and the dish will be ready. To enjoy this dish more, it is advisable to prepare it one day in advance as the meat is more tasty.


You can use any part of the chicken but always without skin. I always choose the thighs that go very well for this dish.
