Ingredients

6 portions
  • 1 kilo chicken wing
  • 1 cup cornstarch
  • 1/4 cups potato starch, for the batter
  • 1/4 cups flour, for the batter
  • 1/2 teaspoons baking soda, for the batter
  • 1 tablespoon onion powder, for the batter
  • 1 egg, for the batter
  • 1/2 cups milk, for the batter
  • enough salt, for the batter
  • enough black pepper, for the batter
  • enough vegetal oil, for the batter
  • 3 tablespoons jalapeno pepper, pickled red, for hot sauce
  • 2 chile de árbol peppers, for hot sauce, clean and soaked
  • 2 guajillo chilies, for hot sauce, clean and soaked
  • 2 cloves garlic, for the spicy sauce
  • 1/4 cups vinegar, for the spicy sauce

Preparation

Cover the chicken wings with the cornstarch.Set aside
For the batter, in a bowl mix the potato starch, the flour, the baking powder, the onion powder, the egg, the milk, season with salt and pepper.
Heat the oil to 170°C, (392 °F) fry the wings for 3 minutes to brown the skin. Remove and cover with batter mixture.
Fry again for 7 minutes to finish cooking the chicken.
Drain and remove excess fat with an Elite® megaroll kitchen towel.
For the sauce. Blend the red jalapeño pepper with the chile de árbol, the guajillo chile, the garlic and the vinegar.
Cover the wings with this sauce and serve immediately, serve with your Elite® Ultra napkins.

PRESENTATION

On a platter accompanied by sticks of celery and carrot.

TIPS

It is important that when frying the wings, check carefully the oil temperature, so that the chicken cooks well, otherwise it will remain raw in the center.
