  • enough of vegetable oil for the batter
  • 3 spoonfuls of jalapeno pepper pickled red, for hot sauce
  • 2 pieces of Chile de árbol pepper for hot sauce, clean and soaked
  • 2 pieces of guajillo chili pepper for hot sauce, clean and soaked
  • 2 cloves of garlic for the spicy sauce
  • 1/4 of Cup of vinegar for the spicy sauce

Preparation

Cover the chicken wings with the cornstarch. Reservation
For the batter, in a bowl mix the potato starch, the flour, the baking powder, the onion powder, the egg, the milk, season with salt and pepper.
Heat the oil to 170 ° C, fry the wings for 3 minutes to brown the skin. Remove and cover with batter mixture.
Fry again for 7 minutes to finish cooking the chicken.

For the sauce. Blend the red jalapeño pepper with the chile de árbol, the guajillo chile, the garlic and the vinegar.
