We give you the best recipe of Adobo Marinated Wings that you can prepare from a marinade of dried chilies, ideal to accompany with vegetables and an exquisite dressing of blue cheese. Ingredients

6 portions
  • 1 kilo chicken wing
  • 1/2 cups lemon juice
  • 3 tablespoons paprika
  • 2 tablespoons chilli powder
  • 2 tablespoons macha sauce
  • 1 pinch salt
  • 1 pinch black pepper, with lemon
  • 3 tablespoons vegetal oil
  • 4 guajillo chilies, clean, deveined and soaked in hot water
  • 3 morita chili peppers, clean, deveined and soaked in hot water
  • 1/4 cups chipotle peppers in adobo sauce
  • 4 cloves garlic, roasted
  • 2 tablespoons allspices
  • 1 tablespoon cumin
  • 1/2 onions, grilled
  • 1/4 cups lemon juice
  • 1/2 cups butter, melted
  • 1 tablespoon salt
  • enough blue cheese dressing, to serve
  • enough celery, on toothpicks for serving
  • enough carrot, on toothpicks for serving

Preparation

In a bowl mix the wings with lemon juice, paprika, chilli powder, salsa, season with salt and pepper with lemon, marinate for 30 minutes in teh refrigerator.
Heat a pan over high heat with the oil, fry the wings until golden brown. Remove from the pan and reserve. Wash the pan with Salvo® more power *, expert cuts fat. * vs Salvo Cleaning and Care.
For the adobo, liquefy the chiles with the peeled garlic, the fat pepper, the cumin, the onion, the lemon juice and the butter until obtaining a smooth sauce.
In the same pan, cook the marinade until slightly reduced, add the wings and cover with the sauce, cook a few minutes. Remove and serve with blue cheese dressing and vegetable sticks.

PRESENTATION

Serve with the dressing in the on a round plate.

TIPS

Deep fry the wings in the pan so that they are crispy, this will leave the skin with a delicious taste.
