Put in a pot to boil the chicken with half an onion and salt to taste, when cooked, separate from the broth and drain.
Share the onions chambray in quarters, the same with the serrano peppers. Bacon picalo in medium squares.
In a saucepan add the oil to fry the bacon until golden brown. Remove it from the pan and fry the chicken in the fat of the bacon, since this golden one adds the onions, the chilies and the cup of chicken broth; let the broth reduce.
Add the salt-and-pepper bacon to taste and cook the onions and chiles for approximately 15 to 20 minutes.
