Chicken with Garlic Mushrooms

If you like recipes with garlic, prepare this simple chicken with garlic mushrooms. A delicious preparation of chicken breast stuffed with panela cheese accompanied with guajillo chili, garlic, Canola Vita® oil and the touch of parsley. It is ideal for lunch or dinner on any occasion; since its flavor will conquer even the most demanding palates.

In addition, Canola Vita® oil is a 100% natural canola oil that is pure and healthy due to the press extraction methods it has. Some of the many benefits it has is that it contains omegas, is low in saturated fat and contains no cholesterol. Ingredients

4 portions
  • 2 cups Vita® Canola Oil
  • 4 tablespoons garlic, cut into thin slices
  • 1 cup guajillo chili, cut into slices
  • 2 cups mushroom, filleted
  • 4 chicken milanesa (breaded) , flattened
  • 200 grams panela cheese, cut into sticks, to fill
  • 1 pinch salt and pepper
  • 1/4 cups parsley, finely chopped, to decorate

Preparation

Preheat the oven to 180 °C. (350°F)
For the garlic in a bowl mix the Canola Vita® oil with the garlic, the guajillo pepper, the mushrooms and marinate for 30 minutes. Set aside.
On a table place chicken breasts, season with salt and pepper, stuffed with panela cheese and wrap to form a roll. Cover with foil and bake 15 minutes or until the chicken is done. Remove from the oven cut into slices and reserve hot.
Heat a pan over medium heat, add the mushrooms with the marinade and cook for 10 minutes over medium heat or until the garlic is golden and the mushrooms are soft. Season with salt and pepper and add the chopped parsley.
Serve the chicken breast with the garlic mushrooms, add a salad and enjoy.

PRESENTATION

Serve chicken with garlic and a chayote squash salad, zucchini and carrot.

TIPS

Take care that the guajillos chiles don't burn at the time of cooking, as they will make your preparation bitter.
