  • 1 tablespoon of Butter
  • 3 spoonfuls of onion finely chopped
  • 1 tablespoon of garlic finely chopped
  • 1 piece of chicken breast cut into thin fajitas
  • 3/4 of Cup of Nestle media creama
  • 1/4 of Cup of evaporated milk
  • 1/4 of Cup of chipotle peppers in adobo sauce ground
  • to taste of salt and pepper
  • 2 pieces of avocado
  • 2 spoonfuls of red onion finely chopped
  • 1 tablespoon of serrano pepper finely chopped
  • 1 tablespoon of Mayonnaise
  • 2 spoonfuls of lemon juice
  • 3/4 of Cup of refried beans
  • 4 pieces of Flour tortillas Northgate
  • 1 Cup of Manchego cheese grated
  • 1 tablespoon of fresh coriander

    Preparation

    In a pan over medium heat, cook the onion and garlic with the butter until they are transparent, add the chicken, season and cook until golden brown.
    Add the half cream, the evaporated milk and the chipotle, let it boil and cook for 5 minutes or until it thickens. Season with salt and pepper to your liking, cool.
    For the guacamole, in a bowl mash the avocado with the help of a fork, mix it with the purple onion, the chile serrano, the mayonnaise, the lemon juice and season.
    For the assembly, spread beans in each Northgate flour tortilla, add guacamole, chipotle chicken, Manchego cheese and coriander leaves.
    Close as a burrito and heat in a skillet over medium heat before serving. Cut in half and enjoy.
