Preparation
Cook the breasts with the peeled potatoes, salt, celery, onion and parsley.
When the potatoes are soft press (hot) mashed for the dough.
Mix the potato with flour, add salt and pepper to taste and chicken stock to be able to knead.
Make balls with pear-shaped piquitos ready to fill with chicken.
For the filling, brown the onion and garlic until they are translucent, then add the tomato and cook until it dries a little.
Add the shredded chicken and season with salt and pepper.
Fill the peritas with the chicken and close.
In a deep bowl beat the eggs and in another deep bowl place the ground bread.
Pass each ball first through the egg and then through the bread crumbs.
Heat the vegetable oil in a pan and fry the coxinhas until golden brown. Remove from oil and dry with absorbent paper.
