Try this recipe of Biscay chicken with black and green olives, to give a different flavor to your typical chicken stew. This dish is perfect for cooking at holiday parties, but it will work well to change the menu any day of the week. Remember to season the dish little by little since the olives in brine tend to be salted. If you wish you can add a touch of white wine, this will make the dish have more sweet and aromatic touches.

Ingredients

4 servings
  • 3 tablespoons of olive oil
  • 5 chicken legs with thigh
  • 1/2 cup of onion finely chopped
  • 2 tablespoons of garlic finely chopped
  • 2 cups of tomtato diced
  • 1 cup of mashed tomatoes
  • 1/2 cup of Bell pepper canned, in strips
  • 1/4 of cup of black olive sliced
  • 1/4 of cup of green olive sliced
  • 5 güero ppeppers
  • 1/2 cup of chicken soup
  • to taste of salt
  • to taste of black pepper
  • 1/4 of cup of parsley finely chopped
  • enough of parsley To accompany

Preparation

In a saucepan with hot olive oil, pepper and fry the chicken on both sides over medium heat. Remove the pieces from the pan and reserve the used oil.
In the same oil, sauté the onion and garlic until they change color. Add the tomato, mash and cook for a few minutes. It incorporates the golden chicken pieces, the bell pepper, the black olive, the green olive, the güero pepper and the chicken stock; Season with salt, pepper and parsley. Cover and cook for 20 minutes or until the chicken is sufficiently cooked.
