It is a very popular recipe of Peruvian origin, rich and easy to prepare. The original recipe is with mondonguito but it can be made with chicken as in this case, chicken and even meat.

Ingredients

4 portions
  • 1 onion
  • 2 tablespoons Yellow pepper, ground
  • 1/2 kilos chicken
  • cumin
  • 2 cloves garlic
  • 1/2 kilos yellow potato
  • parsley, finely chopped
  • black pepper
  • 1 carrot

Preparation

Fry the diced onion in small pieces, add the garlic cloves and the chopped yellow pepper. Season with pepper and cumin and add the chicken in small pieces. Move
Add the yellow potatoes and diced carrots to the broth.
Add the chicken in pieces and let cook. Once cooked, unravel and reserve.
In the end add parsley and chopped oregano. Rectify the seasoning. Let reduce until there is a texture of stewed broth.

TIPS

If in your country there is no ají replaced by some yellow chile.
