Juicy chicken medallions mounted on a spinach sauce and stuffed with vegetables. There is nothing more healthy and delicious than this dish. Try to do it at home, you will like it.

Ingredients

2 portions
  • 4 chicken breasts, in medallions
  • 100 grams mushroom
  • 1 bunch spinach
  • 2 tomatoes, Boys
  • 1/4 white onions
  • 1 pumpkin
  • 1 jalapeno pepper
  • chicken consommé
  • McCormick® Minced Garlic
  • salt, to taste
  • 1 teaspoon oil
  • monterrey cheese, grated

Preparation

Season the medallions, place them in the pan so that they begin to brown with little oil. Cover to finish cooking, once ready remove the oil.

Fry in a pan with little oil, season with chicken broth, cook for 5 minutes, add the spinach and cook for another 7 minutes. Finally liquefy.

In a dish empty a part of the sauce and place a medallion, then put a layer of pumpkins and grated cheese, to finish putting another medallion on top and place the mushrooms.
