Try this recipe for chicken a la vizcaína with black and green olives, to give a different flavor to your typical chicken stew. This dish is perfect for Christmas party cooking, but it will work well for changing the menu any day of the week. Remember to season the dish little by little as olives in brine tend to be salty. If you want you can add a touch of white wine, this will make the dish have more sweet and aromatic touches.

Ingredients

4 portions
  • 3 tablespoons olive oil
  • 5 chicken legs, with thigh
  • 1/2 cups onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 2 cups tomtato, diced
  • 1 cup mashed tomatoes
  • 1/2 cups bell pepper, canned, in strips
  • 1/4 cups black olive, sliced
  • 1/4 cups green olive, sliced
  • 5 güeros chilis
  • 1/2 cups chicken soup
  • to taste salt
  • to taste black pepper
  • 1/4 cups parsley, finely chopped
  • enough parsley, To accompany

Preparation

In a saucepan with hot olive oil, add salt and pepper and fry the chicken on both sides over medium heat. Remove the pieces from the saucepan and reserve the used oil.
In the same oil, sauté the onion and garlic until they change color. Add the tomato, the puree and cook for a few minutes. Add the golden chicken pieces, the bell pepper, the black olive, the green olive, the güero pepper and the chicken broth; season with salt, pepper and parsley. Cover and cook for 20 minutes or until chicken is cooked enough.
Serve on an extended plate, decorate with chopped parsley, accompany with white rice and tortillas.
