Preparation
Season the chicken with salt and pepper. Heat a pan and add oil, seal the chicken thighs and reserve.
Add two tablespoons of butter to the pan and add the onions, potatoes and celery.
Once the vegetables are cooked, add the sugar, mustard, tomato puree and thyme. Turn off the pan and reserve.
In another bowl, mix 5 tablespoons of butter with flour, pour this mixture in a hot pan. Little by little add the chicken broth and beer to this mixture without stopping moving.
Pour this sauce into the pot where you cooked the vegetables, add the chicken. Cover the pot and cook for 50 minutes over low heat.
