Chicken with Corn Sauce Tostadas

Chicken toastadas are delicious, but this recipe with creamy corn sauce will be a new addiction for you. This dish is practical, but at the same time it has that special touch for occasions when you're looking to try something new. Stop preparing the same chicken recipes and instead try these tostadas, served with avocado, fresh cheese and a refreshing Hibiscus drink.

4 portions
  • 1 cup sour cream, for the sauce
  • 1 package cream cheese, for the sauce
  • 1 cup milk, for the sauce
  • 2 cups whole corn kernels, (yellow) for the sauce
  • 2 morita chili peppers, for the sauce (seedless and soaked)
  • 1 garlic, for the sauce
  • 1/8 onions, for the sauce
  • 2 tablespoons butter, for the sauce
  • enough salt, for the sauce
  • enough black pepper, for the sauce
  • 2 cups chicken breast, cooked and shredded
  • 2 tablespoons fresh coriander, finely chopped
  • 1 cup refried beans
  • enough fried or toasted corn tortilla
  • enough avocado, in sheets
  • enough cherry tomato, cut into slices
  • enough fresh cheese, crumbled


Blend the sour cream, cream cheese, milk, corn kernels, morita pepper, garlic and onion. Set aside.
In a pot, over low heat, heat the butter. Then pour the sauce, season with salt and pepper, cook for 10 minutes, add the shredded chicken, rectify seasoning and sprinkle with cilantro.
Spread the beans on the tostada, add the creamy chicken, decorate with slices of avocado, slices of cherry tomato and sprinkle with cheese.
Serve with a Hibiscus drink.


On a clay plate, accompanied by avocado, queso fresco and a Hibiscus drink.


You can substitute the morita chile for chipotle dry chile. When you heat the butter, make it on low heat so it doesn't burn, otherwise it will change the flavor and color of your sauce.
