A delicious recipe that is very traditional in Yucatecan food. Annatto brings a unique flavor to the chicken.

Ingredients

4 servings
  • 1 kilo of chicken leg and thighs
  • cantidad necesaria achiote
  • 1 piece of garlic
  • 1/2 tablespoon of oregano
  • 2 pieces of chicken consommé in cubes
  • to taste of Salt
  • 200 grams of pasta shells
  • 500 grams of mixed vegetable
  • 1 piece of cucumber
  • 1 piece of banana
  • enough of Water
  • 1 piece of green lemon

    Preparation

    Toast the chicken directly in the fire of the pan. Once it is black, wash it with lemon and then cook it in a pot with water.
    Roast a garlic and add it to the cooking of the chicken. You can add chicken bouillon, oregano and salt to taste. Cook the chicken for 40 minutes.
    Once the chicken is cooked, marinate it with achiote, sour orange and salt. Bake the chicken at 180 ° C for 15 minutes, in order to brown the chicken.
    One roast the chicken, serve it with pasta soup (prepared with the chicken cooking broth) and tomato salad, cucumber, fried plantain and lettuce.

    PRESENTATION

    Accompany this dish with some pot beans.

    TIPS

    You can use achiote powder or liquid. In case you get achiote in paste, add orange.
