Honey and Chipotle Glazed Chicken

  • 1/2 cups mango, cut into cubes, for the pico de gallo
  • 1/4 cups red onion, finely chopped, for the pico de gallo
  • 1/2 cups cucumber, cut into cubes, for the pico de gallo
  • 1/2 cups tomtato, cut into cubes, for the pico de gallo
  • 1/2 cups Chile Apple, finely chopped, for the pico de gallo
  • 1/4 cups fresh coriander, whole, for pico de gallo
  • 2 tablespoons olive oil, for the pico de gallo
  • 2 tablespoons yellow lemon juice, for the pico de gallo
  • 1 pinch salt
  • 1 pinch black pepper
  • 2 tablespoons butter, for the glaze
  • 2 cloves garlic, finely chopped, for glaze
  • 1/4 cups lemon juice, for the glaze
  • 1 cup honey, for the glaze
  • 1/4 cups Chile chipotle milled, for the glaze
  • 1 tablespoon Dijon mustard, for the glaze
  • 2 tablespoons butter
  • 2 tablespoons vegetal oil
  • 2 chicken breasts, clean and boneless
  • enough fresh coriander
  • enough White rice
  • enough yellow lemon


For the pico de gallo, in a bowl mix the mango with the purple onion, the cucumber, the tomato, the manzano chili, the cilantro, the olive oil, the lemon juice, season with salt and pepper.
Heat a pot over medium heat with the butter and cook the garlic, add the lemon juice, honey, chipotle, mustard, season with salt and pepper, cook until reduced.
Heat a grilling pan over medium heat with the butter and oil, season the chicken and sear the chicken breast until golden brown, add the glaze and constantly coat with it during cooking. When the chicken is cooked, remove and cut into strips.
On a plate, serve a bed of rice and on top place the chicken strips, add the pico de gallo, fresh coriander and yellow lemon. Enjoy


Serve on a bed of white rice and garnish with pico de gallo, lemon and fresh cilantro.
