Ingredients

2 servings
  • 1/2 Cup of mango cut into cubes, for the pico de gallo
  • 1/4 of Cup of red onion finely chopped, for the pico de gallo
  • 1/2 Cup of cucumber cut into cubes, for the pico de gallo
  • 1/2 Cup of tomato cut into cubes, for the pico de gallo
  • 1/2 Cup of Chile Apple finely chopped, for the pico de gallo
  • 1/4 of Cup of coriander whole, for pico de gallo
  • 2 spoonfuls of olive oil for the pico de gallo
  • 2 spoonfuls of yellow lemon juice for the pico de gallo
  • 1 pinch of Salt
  • 1 pinch of black pepper
  • 2 spoonfuls of Butter for the glaze
  • 2 cloves of garlic finely chopped, for glaze
  • 1/4 of Cup of lemon juice for the glaze
  • 1 Cup of honey for the glaze
  • 1/4 of Cup of Chile chipotle milled for the glaze
  • 1 tablespoon of Dijon mustard for the glaze
  • 2 spoonfuls of Butter
  • 2 spoonfuls of vegetable oil
  • 2 pieces of chicken breast clean and boneless
  • enough of fresh coriander
  • enough of White rice
  • enough of yellow lemon

    Preparation

    For the pico de gallo, in a bowl mix the mango with the purple onion, the cucumber, the tomato, the manzano chili, the cilantro, the olive oil, the lemon juice, season with salt and pepper.
    Heat a pot over medium heat with the butter and cook the garlic, add the lemon juice, honey, chipotle, mustard, season with salt and pepper, cook until reduced.
    Heat a grilling pan over medium heat with the butter and oil, season the chicken and sear the chicken breast until golden brown, add the glaze and constantly coat with it during cooking. When the chicken is cooked, remove and cut into strips.
    On a plate, serve a bed of rice and on top place the chicken strips, add the pico de gallo, fresh coriander and yellow lemon. Enjoy

    PRESENTATION

    Serve on a bed of white rice and garnish with pico de gallo, lemon and fresh cilantro.
