Ingredients

8 portions
  • 1/2 cups orange juice, Acid
  • 1 tablespoon vinegar
  • 1 teaspoon Dried oregano, ground
  • 1 teaspoon cumin powder
  • 1 teaspoon brown sugar
  • 1 teaspoon salt
  • 1/4 onions, finely chopped
  • 1/2 cups ketchup
  • 2 chipotle chilies, with marinade
  • banana leaves
  • 2 chickens, cut into pieces

Preparation

Blend the chipotles, ketchup, onion, orange juice, vinegar, cumin, oregano, salt and sugar.
Strain the sauce and reserve.
Cover well and refrigerate a whole day.
Put the chicken in a refractory and add 1/3 of the sauce, cover well and refrigerate a whole day.
Place a bed of banana leaves in a large baking dish. Arrange the chicken pieces and bathe them with the rest of the sauce.
Season to taste and bake at 180 ° C for 1 hour and a half. Check and if the meat is soft and comes off easily it will be ready.
