Ingredients

4 portions
  • 1 kilo chicken leg, and thigh, without skin
  • 4 guajillo chilies, which does not itch
  • 4 ancho chili peppers
  • 3 pasilla chili peppers
  • 3 morita chili peppers
  • 300 grams mushroom
  • 250 grams potato
  • onions, sufficient quantity
  • 1 Cube Swiss Knorr
  • 1 pinch thyme
  • 1 pinch basil

Preparation

Put the chicken to cook in a saucepan with water, onion, garlic and salt to taste.
Remove the peppers from the peppers and place them in boiling water to hydrate them.
Give a little cooking to the mushrooms with epazote, not totally to finish it with the chicken. Peel and chop the potatoes in regular cubes, then fry them so they do not beat.
Blend the 4 chilies with garlic, onion, allspice, clove, thyme and basil, as well as a cup of chicken broth that we have already cooked.
Once liquefied, pour into a saucepan to season with knorr, add mushrooms, potatoes, chicken and rectify seasoning to taste. Leave 15 minutes or until you have the desired mushroom cooking.

TIPS

Accompany with white rice or pot beans.
