Ingredients

4 portions
  • 1 chicken, party in four pieces
  • 2 roma tomatoes, matches in half and gin
  • 4 slices onion
  • 4 slices Bell pepper
  • 8 leaves epazote
  • 150 grams red achiote paste
  • 4 teaspoons chicken broth powder
  • salt, to taste
  • 8 picture banana leaves, 30 centimeters
  • 4 picture banana leaves, of 23 centimeters

Preparation

Place a banana leaf of 30cm on top of another leaf of the same size, then one of 23 cm, on this is placed a piece of chicken, then one of onion, another of tomato, one of pepper, two leaves of epazote, sprinkle powdered chicken broth and bathe with annatto.
The piece of chicken is wrapped, first with a small leaf and then with the next one and then with the last one in order to form a wrapped with the edges of the ends downwards.
These packages are placed in a steamer with boiling water, covered and cooked for approximately 30 minutes or until the meat is very soft.

PRESENTATION

The closed packages are served in a clay pot, so that each person opens it on his plate. It is accompanied with fresh tortillas and xni pec sauce.
