Chicken with Peanut Sauce

A traditional recipe, but with a different style. Don't forget to prepare it for lunchtime, I'm sure that with this dish you will conquer several palates.

Ingredients

8 servings
  • 6 pieces of beefsteak tomato
  • 3/4 of onion
  • 2 cloves of garlic
  • 1 slice of bread
  • 3 pieces of Chile de árbol pepper
  • 6 pieces of ancho chili pepper
  • 1 Cup of unsalted peanut
  • 2 cups of chicken soup
  • 1 chicken breast
  • 1 pinch of cumin powder
  • 1 pinch of whole clove
  • 1 pinch of ground oregano

    Preparation

    Boil the chicken with a piece of onion, garlic and salt. Once cooked drain, reserve the broth.
    Roast the tomatoes, 1/2 onion, the clove of garlic, chile ancho, chile de árbol and bread.
    Roast the peanuts lightly. Reserve.
    Add in the blender: tomatoes, garlic, onion, peanuts, cloves, oregano, cumin, bread, and broad chili. Blend with the cups of chicken broth that you previously reserved.
    Add the chicken to a saucepan and add the mixture. Season with salt.
    Allow to cook approximately 15 minutes.

    PRESENTATION

    You can use different pieces of chicken or even make enchiladas with the sauce.
