The Mole Verde is one of the richest dishes in Mexican recipes, belonging to easy recipes with chicken. In this recipe you will find the simplest way to make homemade green mole in the most traditional way.

Ingredients

4 portions
  • 4 chicken thighs, or chicken leg
  • 100 grams pumpkin seed
  • 50 grams sesame seed
  • 500 grams green tomato
  • 4 Green Chiles
  • 2 cloves garlic
  • 1/2 onions
  • 1/8 cups lard, of pork
  • 2 cups chicken soup
  • 1/2 tablespoons ground cumin
  • 1 tablespoon Dried oregano
  • salt, to taste
  • white pepper, to taste
  • fresh parsley, to taste
  • fresh coriander, to taste
  • fresh epazotes, to taste
  • 1/2 Romaine lettuce
  • 1 piece fresh ginger

Preparation

Toast nuggets and sesame in a pan. Reservation.
Cook the tomato, chilies, garlic, ginger and onion in a pan with water.
Grind the seeds until you get a paste.
Add cooked vegetables, spices (cumin, oregano, salt and pepper), herbs (cilantro, parsley and epazote) and lettuce to a blender glass. Add a little chicken broth. Grind until a homogeneous sauce is obtained.
Add the butter and the seed paste to a pan. Gradually add the sauce. Once all the sauce is incorporated, lower the heat and stir constantly. Add the rest of the chicken stock little by little. Cook for 30 minutes.
Add the chicken and cook for 20 more minutes. Serves hot

PRESENTATION

Accompany with rice and beans.

TIPS

You can substitute chicken for pork rib.
