Ingredients

6 portions
  • 1 chicken soup
  • 100 grams pumpkin seed, pumpkin
  • olive oils
  • 1 kilo whole chicken, leg, thigh, breast
  • 1 bunch spinach
  • 1/3 green lettuce
  • 2 serrano peppers
  • 1 kilo green tomatillos
  • 1 bunch fresh coriander
  • 1/2 onions
  • 2 cloves garlic
  • salt, and pepper to taste

Preparation

Boil the chicken in 6 cups of water with a piece of onion, 1 clove of peeled garlic and salt. Leave until well cooked. Reserve the broth.
Add the green tomatillos, cilantro, chilies, pepitas (previously toasted), spinach and lettuce, pepper, onion and 1 clove of garlic in the blender.
In a large saucepan fry the sauce very well and wait for it to thicken (15 myths approx).
Add the chicken, cover and cook for 10 minutes approximately.

PRESENTATION

Accompany with white rice or steamed vegetables.

TIPS

You can toast sesame and peanuts and add them before liquefying.
