Preparation
Boil the chicken in 6 cups of water with a piece of onion, 1 clove of peeled garlic and salt. Leave until well cooked. Reserve the broth.
Add the green tomatillos, cilantro, chilies, pepitas (previously toasted), spinach and lettuce, pepper, onion and 1 clove of garlic in the blender.
In a large saucepan fry the sauce very well and wait for it to thicken (15 myths approx).
Add the chicken, cover and cook for 10 minutes approximately.
