Mixiote is a Mexican preparation, whose main characteristics are steaming and some marinated protein in a spicy sauce. For this mixiote recipe, we will use chicken meat and nopales, and the sauce is prepared guajillo chili, ancho chili, green tomato and spices. Traditionally it is wrapped in penca leaf, but there are other alternatives to make them, such as waxed paper. This is a simple and practical version of homemade chicken mixiote.

Ingredients

6 portions
  • 6 guajillo chilies
  • 3 ancho chili peppers
  • 3 green tomatoes, cut into quarters
  • 1/4 onions
  • 2 cloves garlic
  • 2 leaves bay (laurel)
  • 2 pieces clove
  • 2 pieces black pepper, whole
  • 1 tablespoon oregano
  • 1/2 teaspoons ground cumin
  • 2 cups orange juice
  • 1 cup Water
  • 6 pieces chicken
  • enough nopal
  • enough oregano, to decorate

Preparation

Heat a pot over medium heat and cook the guajillo chili, the ancho chili, the tomatoes, the onion, the garlic, the bay leaf, the cloves, the black pepper, the oregano, the cumin, the orange juice and the water. Blend for a few minutes and add salt. Reservation.
Place the chicken in a bowl, season with salt and pepper and add the sauce; marinate for 10 minutes.
On a 30 x 20 cm waxed paper, place the marinated chicken and nopales; closes with hemp thread. Reservation.
Cook the mixiotes for approximately 20 minutes in a steamer or similar pot.
Serve, garnish with oregano and enjoy.

PRESENTATION

Present it in the bag where you cooked it and decorate with oregano. Accompany with rice, tortillas and a drink of your choice.

TIPS

If the wax paper is too thin, double wrap it.
