Mixiote de Pollo Express

The mixiote (from Nahuatl metl "maguey" and xiotl "film from the penca") is a dish typical of Mexico consisting of steamed enchilada meat, wrapped in a film that emerges from the pulp of the pulque maguey. This movie is called Mixiote.

Ingredients

  • 1 mulato chile
  • 1 pasilla
  • 3 wide chiles
  • 1/2 onion
  • 1 tooth of Garlic
  • 2 spoonfuls of White vinegar
  • 1 tablespoon of Salt
  • 1 pinch of cumin powder
  • 1 pinch of oregano
  • 2 tomatoes ball
  • 1 tablespoon of vegetable oil
  • 12 pieces of chicken thigh
  • 6 pieces of nopal tender in strips
  • 6 leaves of avocado
  • 6 leaves of wax paper 30 cm each
  • 6 leaves of aluminum foil 30 cm each

    Preparation

    Asa the chiles on a comal, open and unveil. Place in a pot, cover with water, boil until softened, blend with onion, garlic, vinegar, salt, cumin, oregano and tomato. Cuela.
    In a pan heat the oil, fry the previous mixture and rectify the seasoning; let it cool. Add the chicken thighs and the cactus strips.
    Let marinate in refrigeration for one hour.
    On a work surface place a sheet of aluminum foil, on top of the sheet of waxed paper, stuffed with two thighs, some strips of cactus and an avocado leaf on each paper; cover evenly with the sauce.
    Form bags and tie with kitchen twine to close completely. Place the mixiotes in the Express® Pressure Cooker.
    Place a steaming rack on the base of the Express® Pressure Cooker and add one liter of water.
    Close the Express® Pressure Cooker and add the pressure regulator, place on high heat or until constant steam comes out, lower the flame to medium and cook for 25 minutes.
    Remove from heat, let cool, remove pressure regulator, open Express® Pressure Cooker and go!

    PRESENTATION

    You can accompany it with refried beans and hot corn tortillas.

    TIPS

    You can use any kind of soft meat.
