Ingredients

  • 8 pieces of chile poblano
  • 2 spoonfuls of oil
  • 1/2 piece of onion filleted
  • 1 clove of Garlic
  • 2 pieces of chicken breast cut into fajitas
  • to taste of salt and pepper
  • 1 Cup of a grain of corn
  • 1 Cup of sour cream
  • 1 1/2 cups of Manchego cheese grated

    Preparation

    Grill the poblano peppers in a griddle over high heat, until they burn completely. Put them in a plastic bag, close and let sweat around 20 minutes.
    Once the peppers have sweated, with the help of a knife, remove the skin, unravel and remove the seeds. Cut into thin strips and reserve.
    Heat a skillet over medium heat with the oil and cook the onion and garlic. Add the chicken fajitas and cook until browned, season with salt and pepper.
    Add the rajas, corn kernels and cook for 5 minutes. Add the sour cream and the cheese and let it melt. Season with salt and pepper.
    Serve on flour tortillas or with white rice.

    PRESENTATION

    Serve the slices with the fajitas, and white rice, you can make tacos with flour tortillas.

    TIPS

    If you do not want to grill and let the peppers sweat, look for frozen poblano rajas in the supermarket. If you want to speed up the process of roasting the peppers, fry them carefully in hot oil.
