Delicious, light and healthy, so is this green chicken mixiote, so easy and quick to prepare that it craves for any day of the week. This is a family recipe that I love.

Ingredients

4 portions
  • 2 green pumpkins
  • 2 nopales
  • 1/2 onions
  • fresh coriander, to taste
  • serrano peppers, to taste
  • 1 chicken breast, split in 4
  • aluminum foil, u sheets of paper for mixiote
  • 3 green tomatoes
  • fresh epazotes, to taste
  • salt, and pepper to taste

Preparation

Cut the pumpkins, nopales, tomatoes and onions in small squares.
Finely chop cilantro, parsley, epazote and serrano pepper.
Mix everything in a bowl and season with salt.
Put the mixture of vegetables and the piece of chicken on a sheet of paper for mixiote or in a box of aluminum foil.
Close the foil or aluminum foil with a cord, preventing any open space.
Fill the pot with 1/4 of its capacity with water, put a grill to steam cook or some fret that prevents the mixiotes from coming into contact with the water.
Place the mixiotes in the express pot, and cook for 45 minutes.

PRESENTATION

Accompany the mixiotes with red rice and warm tortillas.

TIPS

If the mixiotes are cooked in a normal pot, they should be left to cook for 1 hour and 15 minutes.
