Ingredients

4 portions
  • 500 grams piece of chicken, legs and thighs
  • 120 grams guajillo chili
  • 8 nopales, chopped in small cubes
  • 4 xoconostle, peeled, chopped and without bones
  • 2 cloves garlic
  • 100 grams sausage
  • 100 grams bacon
  • 1 onion, medium, filleted
  • 1 cup fresh coriander, finely chopped
  • 4 chunks aluminum foil, about 40 cm
  • 1 pinch cumin
  • to taste salt and pepper

Preparation

Prepare the steamer to place the mixiotes.
Prepare the sauce for the mixiotes, add the guajillo chiles in a little water and boil. Since they are soft, liquefy them with garlic, cumin, pepper and salt.
In a fret, place the nopales, xoconostles, coriander, onion, bacon, chorizo ​​and chicken and empty the sauce, incorporating all the ingredients.
Once they are fully incorporated take the pieces of aluminum foil and place a piece of chicken with nopales.
Take the mixiotes in the steamer.
Kitchen for 30 min. approximately and enjoy

PRESENTATION

Open the wallpaper, empty it on a plate and decorate to place some fresh coriander leaves.

TIPS

You can place chile morita minced in case you like the spicy (it goes stirred with all the preparation). Instead of pieces of chicken you can substitute pork ribs. To remove the bones of the xoconostle it is advisable to peel them cut them in half and with a spoon remove them.
