This almond-shaped mole recipe is easy and delicious, since it does not have many ingredients and many of them are at hand. Prepare it for these national holidays and accompany it with traditional Mexican rice.

Ingredients

4 portions
  • 2 chicken breasts, without bone and without skin
  • 1 garlic
  • 1/8 onions
  • 1 tablespoon salt
  • 3 tablespoons oil
  • 6 guajillo chilies, deveined
  • 5 pasilla chili peppers, deveined
  • 3 ancho chili peppers
  • 3 garlic
  • 1/2 onions
  • 3 tomatoes, In rooms
  • 1 cup almond, peeled
  • 1/2 cups raisin
  • 1 cinnamon, raja
  • 1 tablespoon cumin
  • 1 teaspoon clove
  • 3 peppercorn
  • 1 tablespoon sesame seed
  • 3 tortillas, tatemadas
  • 1000 milliliters chicken soup
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 1 tablespoon sesame seed

Preparation

In a pot with water, cook the chicken with the onion and garlic until it is cooked, about 30 minutes. Reservation.
Fry the chiles on a very low heat in a clay pot with oil. Reservation.
In the same pot, fry under the garlic, onion, tomato, almonds and raisins. Give your time to each ingredient, about 5 to 10 minutes each, taking care not to burn.
On the other hand, cinnamon, cumin, clove, pepper and sesame seeds in a low flame fire.
Blend the chilies, with the mixture of almonds, spices and a little broth until you get a paste.
Fry the pasta in the same clay pot with a little oil and add the broth little by little during the whole cooking.
Cook for an hour or until you release the fat. Add the breasts the sugar and salt and cook 10 to 20 minutes more.
Serve the breasts with the mole and decorate with toasted sesame seeds. Accompany with Mexican rice.

PRESENTATION

Serve the chicken covered in almond mole and the rice on the side.

TIPS

If you do not find peeled almonds, boil the whole almond in water for 10 minutes, drain it and with a towel, rub it until the peel is removed.
