Thaw the chicken at least one day in advance in the refrigerator.
Place the chicken in a deep bowl and marinade with the coarse salt in the refrigerator for at least 4 hours.
Pre warm the oven to 250 degrees Celsius.
Remove chicken from deep bowl and wash thoroughly. Then dry with paper towels.
Season with pepper and thyme and place in a refractory to roast with grid. Pour a glass of water into the container to avoid burning the fat.
Bake the chicken for 30 minutes, remove from the oven and turn and bake for 20 more minutes. Remove, flip and bake for 5-10 more minutes.
The chicken is ready when the skin is golden and crispy, and the meat inside is well cooked and juicy.
